4oz MUSHROOMS
1oz BUTTER
8oz ONION FINELY CHOPPED
DESERT SOON PLAIN FLOUR
2.5 fl oz MILK
2.5 fl oz SINGLE CREAM
SALT & PEPPER TO YOUR TASTE
A LITTLE GRATED NUTMEG

Roast the meat at gas 6 or 400˚F to your preference of rare or well done. Add the whole washed mushrooms 20mins before the meat is ready. Baste occasionally.

Place butter and onions in a pan and cook over a low heat until tender. Mix in the flour.
Add milk and cream gradually then season with salt, pepper and nutmeg. Bring to the boil and remove from the heat.
Blend the sauce in a liquidiser
Serve separately.
