This recipe is for one person
Increase the amounts for extra people.
1 large potato washed and scrubbed, skin on
4 mushrooms peeled and chopped into small pieces
3 spring onions peeled and sliced thinly
2 rashers of bacon
Small knob of butter.
Some grated cheese.
Put the potato to bake...oven or microwave can be used.
Grill the bacon until very crisp.
Fry the onions and mushrooms in the butter until tender.
When the potato is ready, cut off a “lid”
Scoop out the contents into a bowl, keeping the skin intact.
Break the bacon into small pieces
Add them to the bowl with the mushrooms and onions.
Mix thoroughly then return the whole mixture to the potato skin.
Sprinkle the cheese on top, and bake again (or microwave) until piping hot and the cheese has melted.
(If you are not using it straightaway)
This dish may be prepared well in advance and refrigerated and then re-cooked the following day,
Or frozen until required...
Allow sufficient time for the potato to heat completely.
The ingredients may be varied to your choice but the method is the same.
