
4 SALMON FILLETS - SKINNED
2 TABLESPOONS LIGHT SOY SAUCE
1 TABLESPOON SHERRY
2.5cm PIECE OF ROOT GINGER
SMALL BUNCH OF SPRING ONIONS
Peel the root ginger and cut into thin strips
Trim the spring onions and shred them.
In a bowl, mix the soy, sherry, ginger and onions.
Score the tops of the salmon fillets with a sharp knife and add to the bowl.
Make sure the fillets are covered with the marinade then refrigerate for 1 hour.

Preheat the grill to medium
Remove salmon from the marinade
Grill on each side for about 3mins
Remove the onions and ginger from the bowl
And use them as a garnish
Serve with a salad.
