2 COS LETTUCE HEARTS
6 TABLESPOONS OLIVE OIL
50g PARMESAN CHEESE
4 THICK SLICES OF WHITE BREAD

Cut the bread into 1cm cubes to make croutons.
Heat the oil in a fry pan and fry the cubes until golden brown.
Wash and arrange the pieces of lettuce in a serving dish.
Mix in half of the cheese cut into small pieces and add the croutons.

3 TABLESPOONS OLIVE OIL
JUICE OF 1 LEMON
6 TABLESPOONS SINGLE CREAM
1 CLOVE OF GARLIC chopped
HALF A TEASPOON DIJON MUSTARD

Grate the remaining cheese and place in a pan
Add theĀ  oil, juice, cream, garlic and mustard to the pan.
Add Salt and pepper to your taste.
Place over a medium heat and whisk all the time until the ingredients are well blended. Pour over the salad, toss and serve.

Serve with warm garlic bread, and sausages cut into small slices as a side dish.
